Recipe of the Week – Quiche Lorraine

Tonight for dinner, we enjoyed this breakfast-ey recipe. I don’t like eggs, but this is one of the few ways that I’ll eat them. The other is omelet. I guess if you disguise them enough, I can handle eating eggs. 🙂 This is my mom’s recipe, but I’ve amended it a little bit.

Quiche Lorraine

9 or 10 in unbaked pie shell
1 1/2 cups grated Swiss cheese (1 bag)
7 slices bacon (I use turkey bacon and it still tastes good)
1 small onion, chopped
4 eggs
1 1/2 cups half and half
pinch of nutmeg
1/4 tsp. salt
1/8 tsp. pepper

Cook the bacon and carmelize the onion. Crumble bacon into uncooked pie shell.  Add onion and grated cheese. Beat eggs, half and half, and seasonings untill well blended. Pour into shell. Bake at 350 degrees for 30-40 minutes on upper rack of oven until top is puffed and brown and knife comes out clean.

Pie Crust

1 1/2 cups flour
1/2 tsp. salt
1/2 cup shortening
4-5 Tbsp. cold water

Combine flour and salt; cut in shortening. Mix in water, one tablespoon at a time, until mixture forms a dough. Roll out and place in pie pan.
