Recipe of the Week – Tomato Basil Soup


Bret and I enjoyed this super-easy soup this evening. Its simple and fast, and tastes delicious. We like it with grilled cheese sandwiches.

La Madeline’s Tomato Basil Soup

1 stick butter
7 leaves fresh basil (or 3 tsp. dried basil – this is what I use)
4 cups tomato juice
1 can crushed tomatoes
1 cup heavy cream

Mix all ingredients together and simmer for 30 minutes.
